I’m slow cooking my Uncle George’s Gizzards

This is a recipe from my uncle George, except I don’t really have the recipe, so I’m just flying blind, & guessing, of course that’s sort a my forte anyway.  The first time I ate these, he was cooken, em out back, on a wood stove, maybe simmered better that way.  They were the best tasting gizzards I ever ate in my life, but they were also the only ones.
