This is a simple dinner, it’s good for using up some of those fall vegetables like, eggplants, and peppers. Use fresh sausage, this one was Spicy Italian, from Dave’s Meat Service, but any flavor you like would work. We liked a char on the meat and vegetables, so I grilled them just long enough on each side to get that. I finished with a little steam-frying on the stove top. The whole dinner took about 35 to 40 minutes, and request have been made to have it again, always a good sign.
Country Sausage Dinner
- Fresh sausage 1 large link per person
- Japanese eggplant, 3-4 medium per person
- 1 large bell pepper per person
- 1/4 medium onion per person
- 2 cloves garlic
- olive oil
Preheat grill, then char meat and vegetables on both sides. Remove and slice sausage, save any meat juices that are released and add to the pan with the meat. Heat a cast iron or steel pan on medium heat, give it a squirt of olive oil, and water, cover and let the meat steam-fry. Cut the vegetables remove steams and seeds. When the meat starts to stick flip them over give a couple more minutes, and remove. Do the same for each group of vegetables.
