Fava Beans & Carrots Fresh From the Garden
- Fava Beans
- Sweet Butter from grass fed cows like, Straus*, Kerrygold* option make your own see recipe below
- Unrefined sea salt (I use Real Salt*)
Remove Fava beans from their pods. Bring to a boil. Place in ice water. Remove the top knot and squeeze out the beautiful green beans. Clean carrots. Cook in butter until golden. This will caramelize the carrots. When I was little we called this candied carrots, because their so sweet. Add the favas, enjoy!

Fava beans are totally underutilized. They are my absolutely favorite of all beans, but only fresh! There is a lot of prep when cleaning them, but I find it to be a labor of love 🙂
