Caramelized Onion & Bacon dip

Slow caramelizing makes sweet golden succulent onions.  I love their intense sweet flavors in dips and spreads.  Adding the whipped cream to the dip gives it a fluffed texture and more umami to the already complex home-made cream cheese.  Bacon, everything’s better with bacon.

Caramelized Onions

  • 1 large sweet onion, like Walla Walla
  • 1 tablespoon butter
  • pinch of fine sea salt

Slice onion thin. Heat butter on lowest setting in skillet with tight-fitting lid.  When butter melts toss onions to coat with butter, and salt.  Cook covered at lowest temperature 3-5 hours, flipping every hour or so.  Check them when they smell like you should.  Stop when they reach golden brown.

Caramelized Onion & Bacon dip

  • 8-10 oz. Cream cheese   Best with Home-made cream cheese, see post   raw milk home-made cream cheese E-Z
  • pinch of fine sea salt
  • Caramelized Onions
  • 4 strips cooked bacon, diced (I like Smoked uncured, no nitrate/nitrite bacon)
  • 1/2 cup Heavy cream

Whip cream with pinch of salt, set aside.  Whip cream cheese onions and bacon.  Fold in cream, chill and serve.
