Black Mustard

Use organic or clean wild foraged whole black

mustard seeds. Yes they grow wild in CA. & much

of the west.  You can harvest in the fall when dry

& gone to seed. *  Mustard is one of the healthiest

foods on earth with tremendous health benefits.

Enjoy, change & create recipes to please yourself.  A

few steps need to be taken, but after that you can let

your imagination go wild.  The seeds need to be cracked

to release their flavors.  They must soak, a little beer or

wine is good and helps the fermenting processes.  Cold

liquid brings out hot flavors, while warm keeps it mild.

Mustard needs to ferment a bit.  Then adding acid like

vinegar stops it.  Both vinegar & salt preserve mustard

while enhancing its complex bite.


Grind 1 tablespoon black mustard seed to powder.


Pour in bowl.


Grind 3 tablespoons black mustard seed to just cracked.


Add to bowl with 1/4 teaspoon sea salt.


Add 6 tablespoons cold dark beer.


Mix cover & let sit overnight.  Next day add;

  • 1 tablespoon organic maple syrup
  • 2 tablespoons organic apple cider vinegar

If too thin, add 1 tablespoon ground yellow mustard.

If too thick, add a bit more beer or filtered water.
