This is a fun post holiday diet recipe, Gluten Free, &
Low Carb. This recipe makes about 6 pancakes coming
in at approx. 5-7 digestible carbs each.
Egg Foo Young’s origins are Chinese, it was developed
to please 18th century western taste. China town
restaurateurs in at least San Francisco and Boston claim
to have originated the recipes, to increases customers.
Pre cook vegetables & meat then cool,
or use left overs,
add eggs.
Heat a skillet with 1/4 tsp. of fat.
Spread out mixture
crimp & flip until done.
Heat sauce.
Keep pancakes in warming oven.
Cover with sauce and chopped chives.
Diet Egg Foo Young
- 6 eggs beaten
- 1 c sausage or diced meat
- 2 c bean sprouts
- 1 c mushrooms
- 1/4 c onion chopped
- 1 Tbsp.. gr. coriander
- 1 tsp.. white pepper
- 1/2 tsp. sea salt
- (6) 1/4 tsp. fat, 1 for each pancake
- 2 tablespoon chives chopped
Beat eggs, add spices, then all other ingredients,
except chives. Heat an iron skillet add 1/4 tsp. fat
for frying each pancake. Keep pancakes warm.
Sauce
- 1/4 c chia seed soaked in 1/4 c water
- 1/2c bone broth
- 1 Tbsp.. soy sauce
Smooth in blender, or whisk, cook on stove to heat.
Pour over pancakes, top with chives, serve hot.
