Ok, you ever go to the store and you’re looking around and trying to come up with a dinner that’s good, fun, and still on plan? This is what happen to me yesterday, and Scott said, “I like that stir fry thing”. Bingo, fresh bell peppers, red onion, cabbage, mushrooms ,fresh ginger, untrimmed tri-tipe (bought some for ground beef anyway).When we got home I made the sauce; mixed 1 big tablespoon (on plan, not hydrogenated, nothing but nuts) peanut butter, a little soy sauce, and about 1/3 cup of beef bone broth. Next crush some garlic, and grated the ginger, set aside. Cleaned and cut the vegetables, and sliced the meat very thin.
The real trick with stir frying is a hot, hot pan, I use a wok, or cast iron. Now you need oil that will stand up to the heat, I use organic peanut oil. This is a fast dish:

1/3 to 1/2 cup oil into hot pan

toss the vegetables, keep tossing untill they’re cooked to your liking, 5-8 minutes remove

add more oil and the beef, toss to very rare add ginger and garlic (this is like a minute or 2)

add sauce and vegetables
