cover with wax paper and then plastic wrap, and refrigerate over night.  Roast, uncovered at 225 oven or 200 in convection oven, after 4-5 hours flip over and check for doneness.  It should be flexible, not stiff. After 3-4 hours spray with cider vinegar every 30 minutes or so.  The easiest way for me to test for doneness was to cut into the center remove a very thin slice, and see if I liked it.  I did after 5 hours, it seemed perfect to me, but this was a very thin & lean brisket.   When you like how it’s done, remove and cover with foil.  Prepare a side dish if you want, let meat sit 15-30 minutes.  I made fresh green beans with bacon as you can see.  If needed to reheat, use broiler for short time, then remove and slice thin.  I spread on some of my home-made BBQ sauce (see video) on top after slicing and it was excellent.    google – k2 unlimited content
