E-Z tomato sauce

Good home-made tomato sauce made from your own home-grown tomatoes is spectacular!  During the gray days of winter, pulling one of my sweet dense gold sauces from the freezer, is like opening up a burst of summer sunshine.    This process is so simple.  Just simmer them with a touch of unrefined sea salt and filtered water.  When softened up.  Strain them though a food mill, or push them through a colander, to remove skins and seeds.  Continue to cook down on low until, the sauce reaches your desired thickness.  Cool, date, label, store in refrigerator up to 2 weeks, or freeze up to 8 months.
