Chard, Sausage, Bacon & Egg, Mushroom, Onion Lunch, with Sriracha Mayo, Paleo, Gluten Free, Low Carb

We got home from the gym, & feeding our nephews dogs, collecting eggs, mailing letters.  What’s for lunch?  Ah, I don’t know, for some reason I hadn’t planned ahead.  What’s in the fridge?   Organic red chard, sweet onions, cremini mushrooms, Aidells sausage, farmstead bacon.  Mayonnaise made yesterday. Fresh eggs. Chard Sausage Bacon Egg Mushroom and Onion Lunch with Sriracha  Mayonnaise

Makes two servings

  • 2 sausage
  • 2 strips bacon chop after cooking and add
  • 1/2 sweet onion
  • 4-5 mushrooms
  • 1 bunch chard
  • lemon
  • 2 fresh eggs & olive oil for frying

Sriracha  Mayonnaise

Start bacon, cut up sausage and add.  While meat is cooking, clean chard letting it soak, then rinsing until wash water is clean. Clean mushrooms with damp cloth and wipe with dry.  Chop and add.  Next onion.  Toss while cooking.  Roughly chop chard, add and mix in. Squirt with lemon.  Heat another skillet with olive oil.  Cook eggs one at a time until whites are set, but yoke is runny.  Mix 1/4 cup mayonnaise &1/4 teaspoon Sriracha for topping.  When moisture has cooked out of meat vegetable mix, place in bowls top with egg, and sauce.  Enjoy!

  1. I am super excited to try this recipe out! I cook with eggs at almost any time of day especially when I am working out really hard….but I’ve been looking for more creative ways to use them. Thanks for sharing this!
