We got home from the gym, & feeding our nephews dogs, collecting eggs, mailing letters. What’s for lunch? Ah, I don’t know, for some reason I hadn’t planned ahead. What’s in the fridge? Organic red chard, sweet onions, cremini mushrooms, Aidells sausage, farmstead bacon. Mayonnaise made yesterday. Fresh eggs. Great, that’s lunch! Quick and simple.

I am super excited to try this recipe out! I cook with eggs at almost any time of day especially when I am working out really hard….but I’ve been looking for more creative ways to use them. Thanks for sharing this!
