Most meatballs have bread crumbs, crackers or some other gluten. Many include cheese. My new meatball recipe uses sprouted chia seeds for texture. The results tasted so outstanding it might become a new standard. The mouth feel and flavors went way over the top. The appearance could be improved with better shaping, and perhaps an egg for binding, but that would just be for looks.
Incredible Meatballs
- 1 lb. local grass fed ground beef
- 1/2 sweet onion
- 1 pat butter from grass fed cows
- 1 teaspoon each; unrefined sea salt, fresh ground black & white pepper
- 2 large cloves garlic crushed
- 1 cup sprouted Chia Seeds *
Sprouted Chia Seeds
- 1/4 cup raw chia seeds
- 3/4 cup filtered water
Do two or more hours ahead. Mix well, cover, refrigerate is not using with-in 4 hours.
Making the Meat Balls
Caramelize the onion in butter on medium low heat. Let cool. Mix all ingredients well, by hand is best. Form into balls. Brown turning at least once. Place on baking sheet and roast at 325-350 until cooked thru. Approx. 30-45 minutes. Now you have fantastic meat-balls for soups, sauces, sandwiches or salads. Enjoy!
