Summer grilling at it’s best, fresh local farmstead Berkshire pork chops. Coat chops with sea salt and fresh ground black pepper. Set out for 1/2 hour or so and bring to room temperature. Grill on hot coals 3-4 minutes per side. Move to cool side of grill and cook to internal temperature of 145°F, 7-15 minutes. Easy charred carrots cook opposite chops. Prepare by cleaning, cover with olive oil and sea salt. We like to top our meat with unsalted Irish butter, infused with pressed garlic and chopped parsley. Enjoy!
