Chicken Kiev is one of those mythical foods, seldom
served at home, or anywhere. We really loved this
alternative to the traditional, Paleo Chicken Kiev is also
Gluten-Free & Low Carb. Swapping out coconut
flour for AP wheat & crushed walnuts for panko, are the only
real changes. Still this was a pretty much”fly by the seat of
my pants”cooking which I love. Measuring my ingredients
didn’t work: I needed a bit more this, a bit less of that. Look
at the pictures & get the idea. Play, cook, have fun!
This was only 1 chicken breast which made an ample dinner
for the two of us. The best compliment, was when my
husband Scott asked if I would make it again soon.
Chicken Kiev, Paleo, Gluten Free, Low Carb
- chicken breast
- herb butter
- eggs
- coconut flour*
- walnuts*
- bacon drippings or lard for frying*
Herb Butter
Make herb butter as shown
- 1/2 cup butter
- 1/2 teaspoon sea salt
- 1 teaspoon each , chives, thyme & sage
- 2 cloves crushed garlic
Flatten walnuts to corse bread crumb texture.
Slice Chicken thin as shown, pound thin.
Season with sea salt & pepper.
- Place herb butter in center of each meat piece.
- Actually this was too much butter, 1/2 of it was
- right. Seal & press edges together a bit of
- beaten egg can help.
Dust chicken in coconut flour.
Dip chicken in beaten eggs.
Cover with walnuts.
Heat bacon fat ,(from clean bacon) or lard.*
Fry in 1 inch of fat browning all sides.
Drain on paper towels. Roast in 300° oven 20-25 minutes.
Enjoy this beautiful crisp walnut crusted, tender savory chicken
with sweet garlic butter herb sauce flowing from inside.
Made ahead Kiev can be kept warm in a low oven.
*Coconut flour is gluten-free, high in fiber, low in carbs, ideal
food ingredient for celiacs, diabetics & GI sensitives.
