Last Year this was my post for National Grilled Cheese Day! Fiscalini Farmstead Artisan Cheese, Alvarado St. Bread & Home-Made Tomato Pesto

I’m re-posting because I still love it!

Celebrate national Grilled Cheese Day!  Once you make this sandwich, you’ll be celebrating a lot more.  The wonderful silky rich nutty cheese, the fabulous salame flavors, the super intense bit of pesto, the texture of the sprouted bread, and the incredible sweet butter all work together to make this the zen of comfort food.

Tomato Pesto, Aidells Salame and Fiscalini Grilled Cheese Sandwich with Alvarado St. Bread and Kerrygold Butter

  • Kerrygold Butter
  • Fiscalini Extra Mature Bandage Wrapped Cheddar
  •  Fiscalini Premium Smoked Cheddar
  • Aidells uncured Salame both Mesquite and Spicy Jalapeno are pictured & used
  • Alvarado St, Bakery Sprouted bread

Toast bread on one side with a pat of Kerrygold butter.  Remove pan from heat and build the sandwich.  First a pat of butter, slice of bread untoasted side down.  A thick layer of Fiscalini Smoked Cheddar.  Four or more slices of Aidells uncured Salame.  Spread a tablespoon of Chadwick Cherry Heirloom Tomato Pesto on top.  Cover with slices of  Fiscalini Extra Mature Bandage Wrapped Cheddar dotted with Kerrygold butter.  Top slice of bread  untoasted side up, and a pat of Kerrygold butter.  Return pan to heat, after 3-5 minutes lift up and peek to check, when toasted golden, flip over and toast the other side.  Enjoy
