Charred Heirloom Tomato Salsa

Roasting heirloom home-grown tomatoes brings out their sweet flavors.  I love walking thru the garden and coming up with “what’s just been picked” recipes.  The salsa was divine on top of my grass-fed beef salad and topped with Beldi olives.

Charred Heirloom Tomato Salsa

  • Heirloom tomatoes, best home-grown fresh picked
  • green onion, best home-grown fresh picked
  • bulb of garlic
  • jalapeno pepper, best home-grown fresh picked
  • olive oil
  • unrefined sea salt

Roast all on a grilling dish as shown.  Peel garlic.  Remove steams from tomatoes. Chop all and mix. Be sure to save any juices that come out during the chopping process and add.  Toss a bit of good quality olive oil over the mix, to further infuse the wonderful richness of the charred vegetables.  Add bit of salt and enjoy.
