Gluten-free Paleo Low-Carb Mashed Eggplant
Simple, delicious, satisfying, fun and healthy!
Peel 1/2 egg plant.
1 Cup raw per serving.
Add 1/4 cup of filtered water for each 1 cup of eggplant.
Add a few cloves of garlic and dash of sea salt.
Bring to a boil and simmer 10-15 minutes until soft.
Smash with a potato ricer. Simmer a bit more to
reduce water. Add a touch of white pepper.
Dot with sweet butter.
