What could be more fun than a bacon cup appetizers or a meal. Use mini muffin tins to make small ones, or regular size for large. How about Paleo BLT cups, with an over-easy egg on top. Or just fill with a beautiful in season salad, or avocado salsa. The possibilities are endless. Have fun, play with it.
Easy Bacon Cups
Line the out side of a cup cake tin with bacon as shown. Place it on a rack on top of a rimmed baking sheet to catch drippings. Bake at 350. Approx. 40 minutes for thick bacon, thin bacon could take as little as 20 minutes. About half way thru, flip over as seen in second picture. Continue baking in cups or on rack. Check often for crispness to prevent over cooking. Drain on towel until cool enough to handle. Fill, eat, have fun! Imagine all the possibilities! Here is one recipe we love!
